Boost your health with this yummy vitamin-packed soup. If you want, you can add a bit coconut milk/skim on the top and you will enjoy it even more.

Ingredients

  • 3,5 oz Watercress
  • 7 oz Spinach
  • 1 cup Peas
  • 1 White Onion
  • 1 Small Potato
  • 2 Large Cloves Garlic
  • 1 l Veg Stock

Instructions
  • saute onions and garlic in a little oil
  • saute thin slices of potato
  • add green leaves and peas (reserving some spinach)
  • cover with stock and simmer for 5 mins
  • add rest of spinach
  • season (lots of black pepper)
  • blend in a food processor
  • check seasoning
