Chickpea Salad Sandwiches
A delicious alternative to chicken and egg salad sandwiches.
- 1 can chickpeas (15 ounce)
- 6 tbsp vegan mayonnaise
- 1/4 cup celery diced
- 1/4 cup carrot diced
- 1 scallion minced
- 1/2 tsp garlic powder
- salt & pepper to taste
- Place chickpeas, celery and carrot in a bowl and mash them with a potato masher.
- Stir in the vegan mayonnaise along with the scallion and garlic powder.
- Season with salt and pepper to taste.
- Serve on toasted bread with lettuce and tomato.
